Solar Foods represents Finland's most disruptive innovation, cultivating Solein, a microbial protein produced using CO2 as a carbon source and hydrogen for energy, independent of conventional agriculture. Factory 01's design capacity is approximately 160 metric tons/year, with a target to reach 230 metric tons/year during 2026. The company estimates commercial viability requires an annual capacity of around 6,000 metric tons, with Factory 02 projected to reach 6,400 metric tons/year after its initial two phases. Solein is initially targeting health and performance nutrition due to higher price points, but also offers unique functional properties in everyday foods, such as creaminess in non-dairy ice cream and improved moldability in pasta, despite formulation specificities.
